Fruit Pizza
Fruit Pizza Crust:
½ cup shortening
½ cup butter or margarine
1½ cup sugar
2 eggs
2 tsp. Cream of Tartar
1 tsp. soda
1/4 tsp. salt

2/3 cup flour

Mix the shortening, butter and sugar together with an electric mixer until creamy and smooth.  Mix in the eggs, Cream of Tartar, soda and salt.  Add Flour until well mixed.  Spread on large cookie sheet or pizza rounds. Bake at 350 degrees for 10-12 min. Let crust cool.

While crust is baking, make glaze.
Glaze:
1 cup sugar
1/4 cup lemon juice
1/4 tsp. Salt
3/4 cup water
1 cup orange juice
3 Tbsp corn starch
 
Cook together stirring constantly. Boil 1 minute. Cool in the refrigerator.  When cooled, pour over fruit that has been put on the cooled Fruit Pizza Crust.

When crust has cooled, spread cream cheese mixture over crust.
Cream Cheese Spread:
2 (8 oz) pkgs. Cream Cheese
1 cup sugar

Mix together and spread on top of crust. Put on fruit of your choice such as strawberries, kiwi, bananas, peaches, grapes, etc. Immediately pour cooled glaze over fruit to keep fruit from going brown.  Refrigerate for 2 hours

Yields approximately 20 servings.
